CORN AND ZUCCHINI FRITTERS
Ingredients:
- 2 CORN COBS, KERNELS SLICED OFF
- 2 CUPS GRATED ZUCCHINI
- 2 Tbs QUINOA FLOUR
- 2 ORGANIC FREE RANGE EGGS
- 2 tsp CURRY POWDER
- ROCK SALT TO TASTE
- PEPPER TO TASTE
Directions:
Combine all ingredients (eggs last) into a large mixing bowl, drop large spoonfuls of mixture into a non stick fry pan and flatten with spoon, cook until golden brown on both sides.
