CORN AND ZUCCHINI FRITTERS

Ingredients:

  • 2 CORN COBS, KERNELS SLICED OFF
  • 2 CUPS GRATED ZUCCHINI
  • 2 Tbs QUINOA FLOUR
  • 2 ORGANIC FREE RANGE EGGS
  • 2 tsp CURRY POWDER
  • ROCK SALT TO TASTE
  • PEPPER TO TASTE

Directions:

Combine all ingredients (eggs last) into a large mixing bowl, drop large spoonfuls of mixture into a non stick fry pan and flatten with spoon, cook until golden brown on both sides.
