CHICKEN RATATOUILLE

1 TABLESPOONS CANOLA OIL

2 DOUBLE CHICKEN BREASTS CHOPPED

1 MEDIUM ONION SLICED

3 CLOVES GARLIC MINCED

1 ZUCCHINI, UNPEELED, SLICED INTO HALF MOONS

1 YELLOW SQUASH

1 EGGPLANT, UNPEELED, DICED

1 RED CAPSICUM SLICED

9 SHIITAKE MUSHROOMS SLICES

4 LARGE TOMATOES SLICES

10 BASIL LEAVES

2 TABLESPOONS FRESH PARSLEY CHOPPED

1. Heat oil in a large skillet. Sauté chicken until browned, about 3 minutes

2. Add onion and brown, about 3 minutes

3. Add garlic, zucchini, yellow squash, eggplant, peppers and mushrooms, Cook about 15 minutes, stirring to cook evenly.

4. Add tomatoes, basil and parsley. Stir to combine. Cook about 5 more minutes. Option to serve with brown rice.
