WHITE FISH PATTIES

INGREDIENTS

  • 2 cooked white fish fillets, flaked
  • 1 carrot, grated
  • 1 small onion, diced finely
  • 1-2 tsp Dijon mustard
  • 2 eggs
  • Pinch of chilli flakes
  • Handful parsley, chopped finely
  • Sea salt to taste
  • ½ cup brown rice crumbs

DIRECTIONS

  1. Place flaked fish in a bowl with half the rice crumbs and all other ingredients.
  2. Form into patties and coat with remaining rice crumbs
  3. Cook in non stick fry pan with a little coconut oil for about 3-4 minutes each side or until golden brown.
