INGREDIENTS
- 2 cooked white fish fillets, flaked
- 1 carrot, grated
- 1 small onion, diced finely
- 1-2 tsp Dijon mustard
- 2 eggs
- Pinch of chilli flakes
- Handful parsley, chopped finely
- Sea salt to taste
- ½ cup brown rice crumbs
DIRECTIONS
- Place flaked fish in a bowl with half the rice crumbs and all other ingredients.
- Form into patties and coat with remaining rice crumbs
- Cook in non stick fry pan with a little coconut oil for about 3-4 minutes each side or until golden brown.
